Amazingly Avocado KETO Buns

Serves 4

For the Avocado Buns:

Ingredients:

  • 4 ripe avocados
  • Sesame seeds or Everything But the Bagel Seasoning

Instructions:

  1. First, split four avocados in half, remove pit.
  2. Decorate half of each “bun” with sesame seeds or Everything But the Bagel seasoning from Trader Joe’s.
  3. Fill each bun with one of the following variations.

For the Breakfast Sandwich:

Serves 1

Prep time: 10 min.

Cook time: 5 min.

Ingredients:

  • 1 egg
  • 2 strips bacon
  • Cheddar cheese slice
  • 5 baby spinach leaves

Instructions:

  1. Fry the egg and bacon in a pan until cooked.
  2. Place bacon on top of the egg and cover with cheese until cheese melts. You may cover with a lid to melt cheese quickly.
  3. Take one avocado bun, arrange spinach leaves on the bottom bum.  
  4. Place egg, bacon, and cheese on top.
  5. Season with salt and pepper to taste. Finish with a top bun.

For the Slider:

Serves 1

Prep time: 5 min.

Cook time: 10 min.

Ingredients:

  • ¼ pound ground beef patty
  • Cheddar cheese slice
  • 1 slice beefsteak tomato
  • 1-2 slices green leaf lettuce
  • 1-2 tsp mayo

Instructions:

  1. Cook burger in frying pan for about 3 minutes, flip, continue cooking until done to your liking.  
  2. Flip again, cover with cheese to melt. Use a lid to melt cheese faster.
  3. Take an avocado bun, place the burger in the bottom, top with tomato, lettuce, and mayo.
  4. Season with salt and pepper to taste. Finish with a top bun.

For the Buffalo Chicken:

Serves 1

Prep time: 10 min.

Ingredients:

  • ½ cup shredded rotisserie chicken breast
  • 1 tbsp Franks hot sauce
  • ½ tsp butter
  • 1 tbsp blue cheese crumbles
  • 1 tbsp blue cheese dressing
  • 4-5 leaves baby spinach

Instructions:

  1. Combine hot sauce and butter, microwave 15-30 seconds until butter melts. Stir to combine.
  2. Add sauce little by little to chicken until coated to your liking. Take an avocado bun, place spinach on the bottom.
  3. Top with chicken, blue cheese crumbles, and dressing.
  4. Season with salt and pepper. Finish with a top bun.

Kickin’ Chicken KETO Salad

Serves 1

Prep time: 5 min.

Ingredients:

  • ½ cup shredded rotisserie chicken
  • 1 tbsp mayo
  • 1 tbsp chopped celery
  • 1 slice beefsteak tomato
  • 4-5 leaves baby spinach or arugula

Instructions:

  1. Combine chicken, celery, and mayo.
  2. Take an avocado bun, add spinach or arugula to bottom, place chicken on top, then top with tomato.
  3. Season with salt and pepper. Finish with a top bun.
