  • 1/2 cup coconut flour
  • 1/2 cup powdered erythritol
  • 2 eggs
  • 1/3 cup melted coconut oil
  • 1/3 cup plain greek yogurt
  • 1 tsp pure vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 tbsp baking powder
  • 1 cup shredded zucchini
  • 1/3 chopped walnuts

Instructions:

  1. Preheat your oven to 350°F. Line a 9-inch loaf pan with parchment paper and lightly spray with nonstick cooking oil spray.
  2. Add all ingredients to a large bowl. Stir until well combined.
  3. Transfer the batter to the prepared pan and bake for about 45-55 minutes, or until golden and cooked through.
