Keto Sugar Cookies

One of the reasons keto is here to stay is you can have your cookies and eat them too. It all comes down to how you swap out sugar!  

For this recipe, we use the brand Swerve, which contains erythritol. You can learn more about what keto sweeteners we recommend here. Hint: not all are created equal, and you want to use the right ones if you're going to be in ketosis.

Keto Sugar Cookies

Using different cookie cutter shapes can bring these keto sugar cookies to life all year round.

We love to use stars and stripes in July, and some Christmas tree cutters in the winter to bring a little extra magic to these treats.  

Ingredients:

  • 1 cup almond flour 
  • 1/4 cup coconut flour 
  • 1/4 cup powdered Swerve 
  • 1/2 teaspoon baking soda
  • 1/2 cup softened butter
  • 1 large egg 
  • 1 ½ tsp pure vanilla extract
  • 1/2 tsp xanthan gum 
Optional Glaze:
  • 1/3-1/2 cup of powdered Swerve
  • 1/4 - 1/3 cup of heavy cream

Instructions:

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper. 
  2. Beat all ingredients together with an Electric mixer.
  3. Roll dough out between two pieces of parchment paper to desired thickness. Use a little coconut flour if the dough is sticky. 
  4. Cut into shapes with cookie cutters and carefully transfer to parchment-lined baking pan.
  5. Bake for 7-10 minutes or until edges is lightly browned.
  6. Remove from the oven, let cool on cookie sheet for about 5-10 minutes then transfer cookies to a cooling rack until completely cooled.
Glaze (Optional):
  1.  Pour the powdered sweetener in a small bowl. Add enough heavy to make a thin glaze. Use all-natural food coloring, if desired.

In this recipe, the glaze is optional (we love both ways). So don't let ingreidents or sweetness hold you back from adapting this recipe to your preference.
