Free Avocado Ginger
Shrimp Salad Recipe

This Avocado Ginger Shrimp salad combines shrimp, avocado, baby spinach, almonds, and a ginger dressing to make a crisp and refreshing meal.

Ingredients:

For the Salad:

  • 1 avocado
  • 1/2 lime, juice
  • 1 small cucumber
  • 4 cups baby spinach, or other leafy greens
  • 1 tbsp olive oil, for frying
  • 1 garlic clove, pressed
  • 2 tsp chili powder
  • 1/2 lb shrimp, peeled
  • 2 tbsp sliced almonds
  • Fresh chopped cilantro, for serving

For the Ginger Dressing:

  • 3 tbsp olive oil or avocado oil
  • 1 tbsp fresh ginger, minced
  • 1/2 lime, juice
  • 1/2 tbsp soy sauce, liquid aminos, or coconut aminos
  • 1/2 garlic clove, pressed
  • Salt and pepper, to taste

Directions:

  • Begin by dicing the avocado and squeeze fresh lime juice over the top. Next, peel and slice the cucumber.
  • Divide the spinach among 2 plates, top each plate with some avocado and cucumber. Salt to your liking.
  • Heat oil in a skillet. Season the shrimp with garlic, chili powder, salt and pepper. Add shrimp and cook about 2-3 minutes each side.
  • Place shrimp on top of salads. Sprinkle with nuts and fresh cilantro.
  • Blend or whisk the dressing ingredients until fully incorporated. Serve with salad.
