Butter cookies are a traditional tea-time treat now associated with the holiday season. But once upon a time, they were an all-year-round, universally beloved, household staple.

I crave the warmth and comfort of butter and vanilla in a soft, lightly crunchy, crumbly cookie. And somehow they always take me back to my grandma’s cozy little sunlit kitchen, which is where I was first introduced to these dainty little sweet delights.

And now the recipe…

These Dreamy Creamy Cookies are the keto version of the classic holiday cookies, only these are richer and creamier – these vanilla-infused cookies are whipped up with the finest butter and a subtly exotic mix of almond and coconut flour.

The result is a soft, delectable crunch with that melt-in-your-mouth texture.

Ingredients:

  • 1 cup butter, softened
  • 3/4 cup erythritol, powdered
  • 1 egg
  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract

Directions:

  1. Cream the butter and sweetener until light and fluffy.
  2. Add in the egg.
  3. Stir in the flours and baking powder, then mix in the vanilla.
  4. Chill dough for 30 minutes.
  5. Shape dough into a log shape. Wrap in wax paper and chill 1-2 hours again.
  6. Slice log into cookies. Bake at 350°F until cookies begin to brown (about 8-10 minutes for a pressed cookie or 10-12 minutes for slices).
