Keto Almond Cake
Serving size: 1 slice, or 1/12 recipe
For the Cake:Â
- 3 1/2 cups blanched almond flour
- 1/2 tbsp gluten-free baking powder
- 1/4 tsp Sea salt
- 1/3 cup butter (softened)
- 1/2 cup Monk Fruit Erythritol Blend
- 4 large eggs
- 3/4 cup sour cream
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
For the Glaze:
- 3 tbsp butter (melted)
- 2 tbsp Powdered Monk Fruit Erythritol Blend
- 1/4 tsp Almond extract
- 1/4 tsp Vanilla extract
- 1/2 cup sliced almonds
Directions:Â
- Preheat oven to 350F. Line a cake pan with baking paper.Â
- Add almonds to the parchment paper, and bake for 3-4 mins or until lightly toasted.Â
- In a bowl, mix butter and your sweetener of choice. Stir in almond flour, baking powder, and sea salt. Beat in eggs, sour cream, vanilla, and almond extracts.
- Â Bake, the mixture for 30 mins or until a toothpick, comes out clean. Take out of the oven and leave to cool for 10-15 mins.Â
- In another bowl, mix the glaze ingreidents.Â
- Remove the cake from the pan and set on a plate and glaze once cool.Â
- Garnish with toasted almonds.Â
