Keto German Chocolate Cake

Ingredients:
For the Cake:
- 1 1/2 cups fine almond flour
- 1/4 cup cocoa powder
- 1 scoop Keto Activate
- 2 tbsp dutch cocoa
- 2 1/4 tsp baking powder
- 1/2 tsp salt
- 1/3 cup unsweetened almond milk
- 3 pasture-raised eggs
- 1/3 cup granulated erythritol
- 2 tsp pure vanilla extract
For the Icing:
- 1/2 cup cocoa powder
- 1 scoop Keto Activate
- 8 oz cream cheese
- 1/4 cup grass-fed butter
- 1 1/2 to 3 cups erythritol
- 1 1/2 tsp pure vanilla extract
- 2 to 4 tbsp unsweetened almond milk
- Pre-heat oven to 350F.
- Mix the dry cake ingredients in a bowl and mix well. For a double layer cake, scoop the mixture into x2 8-inch lined baking pans.
- Bake for 14 minutes or until you can remove a clean toothpick. Leave to cool completely before icing.
- For the icing, once the ingredients reach room temperature, mix in a stand mixer. If too thick, add more unsweetened almond milk to reach the right consistency.
This cake stores for up to 1 week in the fridge, however, we doubt it'll last that long once everyone finds out.
