Keto Ridiculously Loaded Radishes

We're super excited to be sharing one of our favorite keto sides. These ridiculously loaded radishes take the place of loaded potatoes and are a real crowd-pleaser.  

You can toss them up and serve with a simple bunless burger, or add them to your table as part of a delicious keto feast. Radishes are an excellent addition to your keto diet and with only 2g net carbs per cup, totally guilt-free. 

If you love spicy or peppery foods, you'll love how flavorful these are; radishes are also rich in Vitamins E, A, C, B6, and K.

And, they're perfect for game day (these are great with a dollop of sour cream and cheddar cheese) or the holiday dinner table when you're craving some good old fashioned comfort food, so don't be shy. Give them a try today. 

Keto Ridiculously Loaded Radishes 

If you're looking for an easy side that's big on flavor and low in carbs, you are in the right place. Here's what you need to know. 

Ingredients:

For the Radishes:

  • 24 oz. radishes, quartered or halved depending on size
  • 1/3 cup avocado oil
  • 2 cloves garlic, minced
  • 8 slices bacon, cooked and chopped 
  • 1/3 cup chopped scallions
  • Sour cream (optional) 
  • Salt and pepper to taste 

For the Cheese Sauce:

  • 3/4 cup heavy cream 
  • 1 cup shredded sharp cheddar 
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • Salt and pepper to taste
  • 1/4-1/2 tsp. xanthan gum (optional)

Instructions:

  1.  Preheat oven to 425 degrees. Line a baking sheet with parchment or foil and spray with cooking spray. 
  2. Arrange radishes on the baking sheet. Toss with avocado oil, minced garlic, salt and pepper to taste. Roast for about 25 minutes or until cooked through and crisp. 
  3. While radishes roast, make your cheese sauce. In a saucepan, heat heavy cream over medium heat, stirring occasionally. When the cream starts to simmer, whisk in shredded cheddar, garlic and onion powders, and salt and pepper. When the cheese has melted, remove from heat and set aside. 
  4. When radishes are done, top with cheese sauce, bacon bits, scallions, and a dollop of sour cream, if desired.

Tip: If the sauce is thin, add a little xanthan gum to thicken. If the sauce is too thick, thin out with more cream.
