Free Crispy, Chewy, Chocolatey, Choc-Chip Cookies Recipe

Ingredients:
- 3/4 cup of softened butter
- 1 cup erythritol, powdered
- 2 eggs
- 2 tsp vanilla extract
- 3 cups almond flour
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 3/4 tsp xanthan gum
- 1 1/2 cup sugar-free chocolate chips
Directions:
- Preheat oven to 350°F.
- Add softened butter and erythritol in a stand mixer or hand mixer, mix on medium until combined.
- Add two eggs and vanilla and mix until combined.
- Combine almond flour, baking soda, salt, and xanthan gum in a medium bowl.
- Add dry ingredients to wet ingredients and mix until combined.
- Fold in sugar-free chocolate chips.
- Scoop cookies onto a lined baking sheet (you may need two depending on how big your sheets are). Bake for 8-12 minutes.
- Let cool on the cookie sheets until firm enough to transfer to cooling racks.
