These crumbly little treats may seem intimidating to prepare with all the ingredients. But they are actually pretty straightforward.

These Crispy, Chewy, Chocolaty, Choc-Chip Cookies are just what a crazy, cookie lover wants – a core of tender, fudgy, chewiness surrounded by crispy, crunchy edges, and studded with heavenly morsels of chocolatey goodness.

The best part – is the sweet, vanilla-scented, aromatic goodness of freshly baked cookies that fills up your home.

Ingredients:

  • 3/4 cup of softened butter
  • 1 cup erythritol, powdered
  • 2 eggs
  • 2 tsp vanilla extract
  • 3 cups almond flour
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 3/4 tsp xanthan gum
  • 1 1/2 cup sugar-free chocolate chips

Directions:

  1. Preheat oven to 350°F.
  2. Add softened butter and erythritol in a stand mixer or hand mixer, mix on medium until combined.
  3. Add two eggs and vanilla and mix until combined.
  4. Combine almond flour, baking soda, salt, and xanthan gum in a medium bowl.
  5. Add dry ingredients to wet ingredients and mix until combined.
  6. Fold in sugar-free chocolate chips.
  7. Scoop cookies onto a lined baking sheet (you may need two depending on how big your sheets are). Bake for 8-12 minutes.
  8. Let cool on the cookie sheets until firm enough to transfer to cooling racks.

Tips:

  • Toss in 1/3 cup of chopped walnuts if you like!
