Free Keto Eggroll in a Bowl Recipe

It’s a one-pan meal, which is one of the all-time favorites for people following a ketogenic lifestyle. It is quick and easy to make, with the delights of an egg roll from your favorite Chinese restaurant, minus the carbs!

Ingredients:

  • 1 tbsp olive oil
  • 1 pound ground sausage (substitute ground beef, turkey, chicken, pork, or vegan meat alternative, salmon, shrimp, or omit entirely)
  • 1/4 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp soy sauce or coconut aminos
  • 4 cups shredded cabbage
  • 1/3 cup shredded carrots
  • 1 cup mushrooms, sliced
  • 1 tbsp toasted sesame oil
  • 1/4 cup scallions, chopped

Directions:

  1. Heat the olive oil in a large skillet and cook ground sausage and onion over medium heat, until the sausage is fully cooked.
  2. Next, mix in minced garlic, ginger, and soy sauce.
  3. Add cabbage, carrots, and mushrooms to the skillet and sauté for about 5-10 minutes, or until the veggies are softened to your liking.
  4. Once you see that the veggies have softened, remove the skillet from the heat. Stir in the sesame oil and top with green onions before serving.

Tips:

  • To add some heat, drizzle with a little Sriracha before serving.
  • To save time, use a packaged coleslaw mix in place of cabbage and carrots.
