Free Luscious Lemon Coconut Fat Bombs Recipe

This lemon treat recipe is Super-Quick and easy peasy lemon squeezy. Literally!

These Luscious Lemon Coconut Fat Bombs are really just an interesting combination of flavorful ingredients that deliciously complement the yellow citrus – the tarty creaminess of the mascarpone, the comforting aroma of vanilla, and the sweet-scented, exotic nuttiness of the coconut, together mellow the sharp tanginess of the lemon.

The result is a sumptuous fat bomb that offers an unparalleled burst of flavors, textures, and scents – fruity, floral, tropical, refreshing, and simply divine.

Ingredients:

  • 8 oz mascarpone or cream cheese, softened
  • 2 tbsp fresh lemon juice
  • Zest of 1/2 a lemon
  • 2-3 tbsp powdered erythritol, or to taste
  • 1/2 tsp pure vanilla extract
  • 1/3 cup unsweetened flaked coconut

Directions:

  1. Line a baking sheet with parchment paper and set aside for later.
  2. Combine all ingredients, except flaked coconut in a bowl. Beat with an electric mixer to combine well.
  3. Roll into 8 balls. If the mixture is too soft, place in the freezer for 10 minutes and try again.
  4. Roll the balls in the flaked coconut and place them on the small baking sheet. Place the baking sheet in the freezer and allow fat bombs to firm up about 20 minutes before serving.

  • Store leftovers in the fridge for one week, or in the freezer for up to 3 months.
