You can think of these cuppies as egg muffins similar to frittatas. And you can make them in 3 different ways.

I love these egg muffins for 3 quick reasons. They are fun to make and cute to serve. They can tempt the pickiest eaters. And they help with portion control.

Ingredients:

For the Base:

  • 6 large eggs⁣
  • 1 tbsp onion, finely chopped (optional)⁣
  • Salt and pepper, to taste

For the Bacon Cheddar:

  • 1/4 cup cooked bacon, chopped⁣
  • 1/4 cup cheddar cheese, shredded

For the Tomato Spinach Mozzarella:

  • 1/4 cup fresh spinach, roughly chopped⁣
  • 6 grape tomatoes, quartered⁣
  • 1/4 cup shredded mozzarella cheese⁣

For the Garlic Mushroom Pepper:

  • 1/4 cup red bell pepper, diced⁣⁣
  • 1/4 cup mushrooms, sliced⁣⁣
  • 1 tbsp fresh parsley, chopped⁣⁣
  • 1/4 tsp garlic powder or 1/3 tsp minced garlic

Directions:

  1. Preheat the oven to 180°C / 350°F and grease the muffin cups or tin with nonstick oil.⁣
  2. Whisk the eggs and onion in a bowl and add salt and pepper, to taste.⁣
  3. Divide your egg mixture into the muffin tin sections and top with desired flavor combinations. You should get about 6-9 egg cupcakes.⁣
  4. Bake for 15-20 minutes. Store it in the refrigerator and reheat when serving.
