Free Spicy Buffalo Cauliflower Bites Recipe

Enjoy this delicious Spicy Buffalo Cauliflower for a tasty keto snack! Cauliflower is a delicious and versatile low carb veggie that is a great stand in for chicken in this recipe. Dip these bites in some bleu cheese or ranch dressing for added fat and flavor!

Ingredients:

  • 4 cups fresh cauliflower florets
  • 2 tbsp olive oil (or avocado or melted coconut oil)
  • salt, to taste
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 cup hot sauce (such as Frank’s)
  • 2 tbsp unsalted butter

Optional for dipping:

  • bleu cheese or ranch dressing

Directions:

  1. Preheat your oven to 425°F and line a broiler safe baking sheet with parchment paper.
  2. Chop the cauliflower into bite sized pieces, if not already done, and add to a large bowl. Drizzle the cauliflower with olive oil and sprinkle with salt, paprika, and garlic powder. Toss to coat
  3. Spread cauliflower in a single layer on the prepared baking sheet and roast in the oven for about 15 minutes or until tender.
  4. Meanwhile, add the butter and hot sauce to a microwave safe bowl and microwave for about 30 – 60 seconds or until the butter is melted. Whisk until smooth. You can also do this in a saucepan over the stove-top, if you prefer.
  5. Remove the cauliflower from the oven and return to the large bowl. Drizzle the hot sauce/butter mixture over the cauliflower and toss to coat evenly.
  6. Return the cauliflower to the baking sheet and move an oven rack to about 6 inches from the broiler, and broil for about 3-5 minutes or until crispy. Watch the cauliflower during broiler to make sure it doesn’t burn.
  7. Serve the cauliflower with bleu cheese or ranch dipping sauce, if you like!

Tips:

  • Serve with some celery or bell pepper sticks for added nutrition!
  • Serve left-over cauliflower over leafy greens with a few cucumber slices and cherry tomatoes and creamy dressing as an easy lunch or dinner salad! Add chopped hard boiled egg for more protein!
