Free Spicy Turkey Bowl Recipe
These salad bowls are full of flavor and nutrients to keep you feeling full and healthy! Ground turkey is a good source of protein and takes only minutes to prepare. Top these salads with a low carb ranch dressing and fresh cilantro for a delicious flavor combination!
Ingredients:
For the Turkey:
- 1 tbsp olive oil (substitute avocado or coconut oil)
- 1/2 lb ground turkey
- 1 1/2 tsp chili powder
- 1 1/2 tsp paprika
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- salt and pepper, to taste
- 1 tbsp tomato paste
- 2 tbsp water
For the Salad:
- 1 cup cooked cauliflower rice
- 6 cucumber slices
- 1/2 bell pepper, sliced
- 2 tbsp pepitas
- 2 tbsp chopped cilantro
- salt and pepper, to taste
- 4 tbsp low carb ranch dressing, or other keto dressing
Directions:
- Heat the olive oil in a skillet over medium high heat. Add the ground turkey and sauté about 3-4 minutes. Drain any grease, add the spices, tomato paste, and water. Stir to combine and cook another minute or two until the liquid has evaporated.
- Meanwhile, divide the salad ingredients amongst two bowls. Top with the turkey and drizzle with low carb Ranch dressing. Enjoy!
Tips:
- You can substitute a tbsp sugar free taco seasoning for the spice mixture, if you like.
- This recipe works well with ground beef or ground chicken, as well.
- To cook the cauliflower rice, simply steam in the microwave or sauté for about 5 minutes in a skillet.
