Free Veggie Buddha Bowl Recipe

Buddha Bowls are a tasty lunch trend that even keto dieters can join in on! This bowl provides a delicious and nutritious mix of veggies, avocado, and seeds. Drizzle with a bit of heart healthy olive oil and detoxifying lemon juice for abundant health benefits!

Ingredients:

For the Bowl:

  • 2 tbsp olive oil, divided (substitute coconut or avocado oil)
  • 1 cup cauliflower rice
  • 1 cup mushrooms, thinly sliced
  • Salt and pepper, to taste
  • 1 cup lettuce, chopped
  • 1/4 avocado, diced
  • 5 cherry tomatoes, halved
  • 2 tsp chia seeds
  • 2 tsp hemp hearts

Optional:

  • fresh herbs or microgreens

For the Dressing:

  • 2 tsp olive oil
  • 1 tbsp lemon juice

Directions:

  1. Heat 1 tbsp of olive oil in a skillet over medium-high heat. Once hot, add the cauliflower rice. Season with salt and pepper and cook for about 3-4 minutes or until done to your preference. Remove the rice to a bowl or plate.⁣⁣
  2. Add the remaining 1 tbsp olive oil to the skillet. Once hot, add the mushrooms, season with salt and pepper, and sauté for about 4-5 minutes or until golden and softened. Transfer to the bowl with the cauliflower rice.⁣⁣
  3. Arrange the lettuce, avocado, and tomatoes in the bowl with the cauliflower and mushrooms. Sprinkle with the seeds.⁣⁣
  4. Drizzle the bowl with olive oil and lemon juice, season with salt and pepper, and enjoy!

Tips:

  • If you don’t have seeds on hand, you can replace them with chopped nuts, such as walnuts or pecans.
  • It’s ok to substitute lettuce with spinach or kale.
