Free Veggie Buddha Bowl Recipe

Buddha Bowls are a tasty lunch trend that even keto dieters can join in on! This bowl provides a delicious and nutritious mix of veggies, avocado, and seeds. Drizzle with a bit of heart healthy olive oil and detoxifying lemon juice for abundant health benefits!
Ingredients:
For the Bowl:
- 2 tbsp olive oil, divided (substitute coconut or avocado oil)
- 1 cup cauliflower rice
- 1 cup mushrooms, thinly sliced
- Salt and pepper, to taste
- 1 cup lettuce, chopped
- 1/4 avocado, diced
- 5 cherry tomatoes, halved
- 2 tsp chia seeds
- 2 tsp hemp hearts
Optional:
- fresh herbs or microgreens
For the Dressing:
- 2 tsp olive oil
- 1 tbsp lemon juice
Directions:
- Heat 1 tbsp of olive oil in a skillet over medium-high heat. Once hot, add the cauliflower rice. Season with salt and pepper and cook for about 3-4 minutes or until done to your preference. Remove the rice to a bowl or plate.
- Add the remaining 1 tbsp olive oil to the skillet. Once hot, add the mushrooms, season with salt and pepper, and sauté for about 4-5 minutes or until golden and softened. Transfer to the bowl with the cauliflower rice.
- Arrange the lettuce, avocado, and tomatoes in the bowl with the cauliflower and mushrooms. Sprinkle with the seeds.
- Drizzle the bowl with olive oil and lemon juice, season with salt and pepper, and enjoy!
Tips:
- If you don’t have seeds on hand, you can replace them with chopped nuts, such as walnuts or pecans.
- It’s ok to substitute lettuce with spinach or kale.
