Free Zucchini Pizza Bites Recipe
These Zucchini Pizza Bites are a quick and convenient snack for all pizza lovers! They take only 15 minutes to prepare and are completely customizable. Add all your favorite veggies, meats, and fresh herbs!
Ingredients:
- 1 medium zucchini
- 1 tbsp olive oil
- 1/2 cup low-carb marinara sauce
- 1/2 cup mozzarella cheese
- salt and pepper, to taste
- Optional toppings: tomatoes, mushrooms, onions, peppers, pepperoni, salami, ham, fresh herbs
Directions:
- Preheat your oven’s broiler to high heat and line a baking sheet with foil sprayed with cooking spray.
- Trim the ends of the zucchini, then slice into ½ inch rounds. You should be able to get about 12-14 rounds.
- Heat the olive oil in a skillet over medium-high heat. Sprinkle the zucchini with salt and pepper and fry about a minute or two on each side.
- Transfer the zucchini rounds to the prepared baking sheet. Top with a little marinara, mozzarella, and any other desired toppings.
- Place the baking sheet under the broiler and broil for 2-3 minutes or until cheese is melted.
- Let cool for a few minutes before serving.
Tip:
- You can use mushrooms instead of zucchini. We recommend baking them instead of broiling, for 10-15 minutes since mushrooms will take a bit longer to soften.
