Stuffed Peppers Recipe

These Cheesy Italian Stuffed Peppers will give you all the delicious flavors of lasagna without the carbs. Loaded with ground turkey, ricotta, mozzarella, and tomatoes, you’re going to love these adorable stuffed peppers.

Ingredients:

For the Peppers:

  • 2 large sweet peppers, halved and seeded
  • 1 tsp garlic salt, divided
  • 12 oz ground turkey
  • 3/4 cup ricotta cheese
  • 1 cup mozzarella
  • 8 cherry tomatoes optional

For Serving:

  • 4 cups salad greens or baby spinach
  • 4 tbsp olive oil for dressing
  • 2 tbsp red wine vinegar for dressing

Directions:

  • Set your oven to 400°F to preheat.
  • Arrange your peppers in a baking dish, season with 1/2 tsp garlic salt. Divide the raw meat among the pepper and press into the bottom of each pepper. Season again with half of the remaining garlic salt and bake for 30 minutes.
  • Next, layer ricotta on top of the meat. Season with garlic salt and top with the mozzarella.
  • Arrange the tomatoes around the peppers.
  • Return to oven to bake another 20-30 minutes.

Tips:

  • If you don’t like ground turkey, ground beef is a great substitute!
  • If you prefer to brown the meat in a skillet rather than cooking in the oven, that is totally fine. Just top with the cheeses and bake for a total of 20-30 minutes.
