Free Chicken Club Stuffed Avocados Recipe

These Chicken Club Stuffed Avocados are a refreshing twist on chicken salad. These are bursting with chicken, bacon, green onions, and a fresh lemon dressing. Enjoy these with a dollop of sour cream and a sprinkle of fresh parsley.⁣⁣

Ingredients:

For the Stuffed Avocado:

  • 4 slices bacon⁣
  • 1 avocado, halved and pitted⁣
  • 1/2 lemon, the juice⁣
  • 1/2 cup diced or shredded baked chicken breasts⁣
  • 1 green onion, washed, trimmed, and sliced

For the Lemon Dressing:

  • 1 tbsp extra virgin olive oil⁣
  • 1 tbsp fresh lemon juice⁣
  • 1/8 tsp dried oregano⁣
  • 1/8 tsp garlic powder⁣
  • Salt and fresh ground pepper, to taste

Optional:

  • sour cream, parsley, cracked black pepper

Directions:

  1. Pan-fry the bacon until crispy. Remove to a paper towel-lined plate. When cool, crumble into a bowl.⁣
  2. Scoop the flesh out of the avocado, and dice. Add diced avocado to bowl with bacon. Keep the skins.⁣
  3. Squeeze some lemon juice over avocado and skins to prevent browning.⁣
  4. Add the chicken and the white part of the green onions to the bowl with bacon and avocado, stir to combine. Set aside.⁣
  5. Whisk together all the dressing ingredients in a mixing bowl.⁣
  6. Pour dressing over all the ingredients in the other bowl.⁣
  7. Spoon the mixture into the avocado skins.⁣
  8. If desired, top with a dollop of sour cream and garnish with fresh parsley and green onions.
