Free Chicken Club Stuffed Avocados Recipe
These Chicken Club Stuffed Avocados are a refreshing twist on chicken salad. These are bursting with chicken, bacon, green onions, and a fresh lemon dressing. Enjoy these with a dollop of sour cream and a sprinkle of fresh parsley.
Ingredients:
For the Stuffed Avocado:
- 4 slices bacon
- 1 avocado, halved and pitted
- 1/2 lemon, the juice
- 1/2 cup diced or shredded baked chicken breasts
- 1 green onion, washed, trimmed, and sliced
For the Lemon Dressing:
- 1 tbsp extra virgin olive oil
- 1 tbsp fresh lemon juice
- 1/8 tsp dried oregano
- 1/8 tsp garlic powder
- Salt and fresh ground pepper, to taste
Optional:
- sour cream, parsley, cracked black pepper
Directions:
- Pan-fry the bacon until crispy. Remove to a paper towel-lined plate. When cool, crumble into a bowl.
- Scoop the flesh out of the avocado, and dice. Add diced avocado to bowl with bacon. Keep the skins.
- Squeeze some lemon juice over avocado and skins to prevent browning.
- Add the chicken and the white part of the green onions to the bowl with bacon and avocado, stir to combine. Set aside.
- Whisk together all the dressing ingredients in a mixing bowl.
- Pour dressing over all the ingredients in the other bowl.
- Spoon the mixture into the avocado skins.
- If desired, top with a dollop of sour cream and garnish with fresh parsley and green onions.

- For a quick version, dress with your favorite store-bought keto salad dressing.
